I LOVE an omakase experience and Sushi By Bou is one of my favorites! I was proudly able to say I had been to ALL the Chicago locations until they opened a fourth one in River North. (712 N Wells) You know I had to go check it out!

Sushi By Bou Opens Fourth Chicago Location at Prosecco’s Lower Level
The intimate restaurant will bring its elevated sushi and omakase menu & edgy, underground poker-vibe to Chicago’s River North neighborhood
Sushi By Bou the unique dining experience with timed chef’s choice omakase, craft cocktails, and an exclusive sushi counter, opened its fourth Chicago location in Chicago’s River North neighborhood on the lower level of Prosecco restaurant. Sushi by Bou allows guests the experience of sitting back and leaving any menu decisions up to a seasoned sushi chef.
The River North space, located at 712 N. Wells, has a captivating, contemporary flair that will pay homage to the allure of underground poker. Retaining the charm of the original architectural elements, while also infusing a modern and refined touch through carefully selected furnishings and lighting, the space exudes an air of timeless elegance, effortlessly blending sensuality with sophistication. From the fun and captivating DJ booth, to the edgy mural, to the main omakase room featuring a custom oil hand painted wallpaper from Japan resembling the golden hour in the bamboo forests, the space exudes a seductive and captivating atmosphere that is sure to charm all who enter.
The 1250 square foot space encompasses a 12-seat counter and 30-seat lounge, an ideal setting for guests to experience Sushi By Bou’s classic 12-course menu ($60 per person) or indulge in their 17-course experience ($100 per person).
Sushi By Bou’s menu features the freshest, highest-quality fish, sourced both locally and globally. Omakase translates as ‘I’ll leave it up to you,’ allowing chefs to guide guests through an exclusive, personalized experience. Selections can include Hamachi (yellowtail); Botan Ebi (spotted prawn); Ikura (salmon roe); Hotate (scallop); O-Toro (fatty tuna); Unagi (bbq eel); and their signature Wagyuni (‘surf and turf’). Hand rolls and other sushi favorites can be made upon request, and additional a la carte items are also available. Dessert, which includes seasonal mochi ice cream, can be added to the end of the meal.
Sushi By Bou offerings a variety of fresh, signature cocktails, including the Shisho Southsider (Suntory Haku vodka, shiso leaves, simple syrup, lime juice), Yuzu Honey Bee (Makers Mark bourbon, honey syrup, yuzu, pink peppercorn) Old Fashioned Pearl (Legent bourbon, angostura bitters, roasted barley syrup), Roku Martini (Suntory Roku gin, sake, olives) and Kyusho Cove (Cruzan Rum, hibiscus syrup, hibiscus tea, lime juice, seltzer). Highballs, imported sake and sake flights and a selection of Japanese beers are also available.
Sushi By Bou was created by NYC-based hospitality group SimpleVenue. Over the last several years, SimpleVenue has made its mark across Chicago with several intimate sushi concepts, all specializing in the Omakase experience. Restaurants include Sushi By Bou – Lincoln Park, Sushi By Bou – West Loop, Sushi by Bou – Gold Coast, as well as Sushi Suite 202, the city’s first hotel room turned sushi speakeasy in the Hotel Lincoln. to unique libations, Sushi By Bou provides an elevated, exclusive experience.
Sushi By Bou will be open for dinner Monday (5pm-9pm), Tuesday and Wednesday (5pm – 11 pm), Thursday and Friday (5 p.m. – 2 a.m.) and Saturday (5pm-3 a.m.). Reservations can be made via OpenTable.
