DrinkDescription: La Sirena recalls the sneak-away beachside joints of Rio de Janiero that inspire its name โ€˜hidden mermaid.โ€™ Chef John Manion serves Latin-local fare with distinctly Brazilian influences that draw on his childhood in Brazil as well as two decades cooking in Chicago.

The wine list is eclectic, focusing on natural and bio-dynamic producers. The cocktail program highlights the spirits of the Americas with ample acidity and brightness with an eye towards innovation. Located at 954 W. Fulton Market, the space offers up an intimate yet lively vibe that easily makes guests forget time and place.

La Sirena Clandestina is one of my favorite restaurants! Itโ€™s been in existence for a little over 3 years now, but it feels like itโ€™s been here forever. I remember my first time going with friends and we still comment till this day we felt like we were there for 3+ hours we had so much fun. ๐Ÿ™‚ I LOVE the vibe! You donโ€™t feel rushed and itโ€™s so cozy and welcoming that you feel like youโ€™re at home. The food is AMAZING!!!! La Sirena Clandestina is thriving and you can read countless reviews on the wonderful food, but I wanted to find out more about the Man that creates such delicious Latin-inspired cuisine. I interviewed Chef/Owner, John Manion and he had some interesting things to say about the restaurant industry in general.

Chef Manion, like most of us didnโ€™t start off in the career he has now. He started off studying English at Marquette University and then did a 360 and started taking culinary classes at Kendall College. His advice to anyone of any age wanting to make a career switch is to go work someplace for free (internship perhaps) and see if you really like it. He has found a lot of people enroll in culinary school (or whatever field for that matter) to soon realize that itโ€™s different from what they thought it would be. โ€œWorking in the kitchen can be hard and brutal. Itโ€™s physical labor and mentally taxingโ€ฆdefinitely a difficult lifestyle. Youโ€™re doing a lot of the same stuff over and over again.โ€ Definitely go work in a restaurant to gain some perspective or for that matter whatever your career passion is to see what itโ€™s really like before you invest the time and money. Your dream may not be the reality you think it is.

John Manion came up as a Chef and then decided to go into ownership. Heโ€™s still trying to figure out how to maintain the appropriate balance of both. His instinct is to be in the kitchen, but as an owner there are other responsibilities you have to tend to outside of the kitchen. His advice is to surround yourself with the best people possible. Besides having the best staffโ€ฆlocation also plays an important role in having a successful restaurant. Chef Manion was born in Detroit and loves the Midwest. He knew Chicago would be the perfect spot for his restaurant. In particular he had never seen anything like the West Loop area. The West Loop started off as the epicenter of the culinary world, but soon fizzled out. He gives credit to Stephanie Izard of Girl & the Goat for reigniting the excitement for the restaurant scene in West Loop. Fulton Market and Randolph Street are lined with highly acclaimed restaurants that people travel the world to experience.

When Chef Manion first started off in the West Loop it was a pretty isolated area, but now itโ€™s booming with all the restaurants and new businesses moving in. He seeโ€™s development happening and it excites him. Lots of people come to the West Loop on the weekends and it would be nice for there to be some galleries, shops, and independent boutiques. He definitely sees more development coming to the area soon. Although there might be more chain/big concept type restaurants due to the rising cost of rent in the area.

Now youโ€™re probably wondering from Johnโ€™s perspective his pet peeves for the restaurant industry. He had to take a second to think about this question, but he quickly said COST. โ€œThings should cost moreโ€ One of the biggest complaints he hears from people when they go to a restaurant is that the food is good, but it was expensive. His stance is โ€œGood food is expensiveโ€ At his restaurant he only works with the best produce that is grown or sourced with care. In his own words โ€œI could buy BS Chicken for a fraction of the price, but itโ€™s my responsibility to buy the best ingredients I can.โ€

From there we ventured into other random topicsโ€ฆ.like what he feels about establishments turning to non-tipping. He sort of didnโ€™t have an opinion one way or the other. He agrees that how tipping done now is not fair. If the servers donโ€™t share their tips equally they can end up making way more than the back staff does. However, right now the labor pool is shallow in the restaurant industry. There are too many restaurants and not enough staff to fill them.

“I feel like I play a part in the fabricate of the restaurant community. Iโ€™ve seen it come and go. I feel like I am a part of the continuum of the ever expanding, ever growing, Chicago restaurant scene. I have served as a mentor to others. You donโ€™t set out to be a mentor, but you just end up influencing and teaching people what you know.”

John Manion is definitely a Chicagoan YOU should know. He is so laid back and easy to talk to. I love we bonded over our dislikes for reality TV. He admits he may have watched an episode or two of Top Chef, but in the end itโ€™s not for him. Like most reality shows the characters are pretty much always the same and his passion lies in the food and not the drama. Chef Diaz is based in Durham, North Carolina and has multiple restaurants, ๐๐”๐“ he was born in raised right here in Chicago. He might have even shared that if he has it his way he seeโ€™s a future restaurant venture in the Chicago Logan Square neighborhood. How lucky would we all be!

The evenings menu was FANTASTIC from the mole to the best green beans Iโ€™ve ever had.  AND ofcourse I asked him about his time on Top Chef. He had 3 words. ๐Ÿ˜‰ Thanks for a lovely dinner @Buenosdiaz ๐Ÿ˜‹ I hope to make it to North Carolina soon!

What an honor to be in the building ahead of the June 19th public opening. 

We gathered in the auditorium of the Forum Building to hear a briefing from ๐—ฉ๐—ฎ๐—น๐—ฒ๐—ฟ๐—ถ๐—ฒ ๐—๐—ฎ๐—ฟ๐—ฟ๐—ฒ๐˜๐˜, ๐—–๐—˜๐—ข ๐—ผ๐—ณ ๐˜๐—ต๐—ฒ ๐—ข๐—ฏ๐—ฎ๐—บ๐—ฎ ๐—™๐—ผ๐˜‚๐—ป๐—ฑ๐—ฎ๐˜๐—ถ๐—ผ๐—ป. We also took an intimate stroll through the museum with subject matter experts stationed throughout to help answer any questions. This experience was AMAZING! I interviewed ๐—๐—ผ๐—ต๐—ป ๐—ฅ๐—ผ๐—ฏ๐—ฒ๐—ฟ๐˜€๐—ผ๐—ป. He serves as incoming Executive Vice President of the Obama Presidential Center. I slept in a treehouse last night and what an adve I slept in a treehouse last night and what an adventure! @Kalahariresortswisconsindells unveiled a collection of luxury Treehouses created in partnership with Pete Nelson of @NelsonTreehouse, widely known as the host of Animal Planetโ€™s ๐‘ป๐’“๐’†๐’†๐’‰๐’๐’–๐’”๐’† ๐‘ด๐’‚๐’”๐’•๐’†๐’“๐’”. 

I attended an intimate media preview. Pete Nelson and Todd Nelson, founder of @Kalahariresorts, shared the inspiration, craftsmanship, and vision behind the Treehouses on our guided tour. The treehouses provide an elevated escape. Theyโ€™re a nature-forward expansion celebrating the beauty of the Dells and the magic of living among the trees. Also onsite is a relaxing pool and hot tub.

The evening concluded with a beautiful experience on the shores of Lake Delton. We had an amazing dinner at the brand New restaurant @Daylenessupperclub. Last night I kicked off the National Restaurant As Last night I kicked off the National Restaurant Association show by attending the @Menumastersawards ceremony. The 29th annual celebration is the restaurants industry premier recognition of menu innovation excellence. The event is by invitation only and for restaurant executives. Congrats to the Hall of Fame winner Chef @grant_achatz.  The competition recognizes R&D leaders for their groundbreaking achievements and lasting contributions to food service.

The event offered a one-night-only culinary experience. The tasting menu was crafted exclusively for this celebration.

The after party presented by @Ventura_Foods is not to be missed. We were treated to high energy entertainment, music, dancing, snacks, desserts, cocktails, AND a special gift! We each got a signed autographed copy of ๐—–๐—ต๐—ฒ๐—ณ ๐—š๐—ฟ๐—ฎ๐—ป๐˜ ๐—”๐—ฐ๐—ต๐—ฎ๐˜๐˜‡ book, ๐˜“๐˜ช๐˜ง๐˜ฆ ๐˜ฐ๐˜ฏ ๐˜ต๐˜ฉ๐˜ฆ ๐˜“๐˜ช๐˜ฏ๐˜ฆ. I headed about 30 miles outside downtown Chicago to ๐–๐ข๐ง๐ ๐‚๐ซ๐ž๐ž๐ค ๐‚๐ก๐ข๐œ๐š๐ ๐จ ๐’๐จ๐ฎ๐ญ๐ก๐ฅ๐š๐ง๐. @Wcsouthland is a luxurious escape from the city. The state of the art hotel opened in 2025 and has over 255 rooms and 43+ suites. Thereโ€™s a pool, fitness center, and a full service luxury spa @wcsouthlandspa that spans 11,665 square feet. The 70,000 square foot casino offers 1,412 slot machines, 56 table games, poker room, and the newly opened - Sportsbook. Sportsbook is a high energy, 24/7 destination for sports fans to watch and wager. 

As a foodie my FAVORITE part is well the FOOD. ๐Ÿ˜† I loved my dinner at Chef @Fabioviviani restaurant @altosteakhouse. We also enjoyed the Food Bazaar located on the ground floor. Thereโ€™s six restaurants within the food bazaar and theyโ€™re all you can eat. I highly recommend heading to Chicago Southland for a staycation @wcsouthland.
